Breakfast For Dinner?!

Our modern schedules are crazy sometimes.  Many families have both parents working, juggling demands and schedules for the whole family.  On top of all that, you have to figure out dinner ideas.  Sometimes, you are so worn out you just want to prepare something every member of your family likes and won’t take forever to make…breakfast!

My go-to Sunday Brunch for my family is mostly whole wheat pancakes with vanilla extract, one smashed banana, chia seed or ground flax with vanilla flavored protein powder.  We have mixed berries, their favorite protein (everyone likes something different) and hash browns.  We always have extra pancakes, so when they have cooled I put wax paper between them and freeze them, marking them clearly.  If I get into a bind-for-time with my sons’ sports commitments, I can pop them out of the freezer and we have a quick and healthy meal anytime.

In the March issue of Cooking Light Magazine I saw a fun recipe that fits the bill for breakfast at dinner:

Mexican Chorizo Hash

2 ounces raw Mexican Chorizo
1 cup pre-chopped onion
1/4 cup coarsely chopped bottled roasted red bell peppers
1/2 teaspoon freshly ground black pepper
1 (6-ounce) package baby spinach
2 teaspoons olive oil
2 1/2 cups refrigerated shredded potatoes (such as Simply Potatoes)
4 large eggs

1. Heat a large skillet over medium-high heat.  Add chorizo to pan; cook 3 minutes or until browned, stirring to crumble. Add onion, bell peppers, salt and black pepper; cook 3 minutes, stirring occasionally.  Add spinach; stir until spinach wilts.  Remove sausage mixture from pan.  Add oil to pan; swirl to coat.  Add potatoes; cook 8 minutes or until bottom is crisp.  Stir in sausage mixture.  Make 4 egg-size spaces in each pan with spoon.  Crack 1 egg into each space.  Cover and cook 4 minutes or until egg yolks are slightly set.

Serves 4 (serving size = 1 egg and about 1 cup potato mixture

*Cooking Light shows utilizing a cast iron, or heavy pan.  I assume that this type of pan helps crisp-up the potatoes.
