Happy Easter from Paula’s Healthy Living!

For many Christian believers Easter is a holiday signifying rebirth.  For many others, Easter is a joyful ushering in of spring, chocolate eggs, and Easter Egg Hunts with family gatherings.

The egg, an ancient symbol of new life, has been part of spring celebrations since ancient times.  One explanation for eggs involvement in this spring holiday from History.com involves eggs being a formerly forbidden food during the Lenten season. People would paint and decorate them to mark the end of the period of penance and fasting, and then eat them on Easter as a celebration. 

The egg hunt and rolling tradition started in 1878 at the White House when President Hayes was in office.  Rolling eggs was a race where children would roll decorated hard-boiled eggs across the White House Lawn. The race was held the Monday after Easter.

Whatever your beliefs, boiling eggs for Easter is not always as easy as it seems. To achieve result in a tasty, hard-boiled egg you should start by bringing the water to a boil, then reduce heat to a bubble-less simmer (between 180 and 190 degrees F).  Gently add eggs, and cook for 10-15 minutes.  Some schools of thought believe that you should heat the water with the eggs in the water from the start.  When the water boils, then you turn the heat off. 

If shells stick to your eggs it may be that the eggs are too fresh.  Use eggs that are a few days old.  My Mother always told me that if you crack an egg that comes out of hot water a bit, before putting into a cool bath, it make them easier to peel.

If your eggs get that greenish hue to them which are unattractive when serving to guests, you can reduce this by reducing the cooking time a bit.  The hue is ferrous sulfide which is formed by a chemical reaction between the sulfur in the egg whites and the iron in the yolk. 

If you plan to eat the eggs that are hidden for an Easter Hunt, don’t  hide more than 2 hours  before. Refrigerate them after the hunt is completed if they are not being prepared into deviled eggs, egg salad or being gently folded with spring vegetables for a salad.
