Turn oven on to 375 degrees.
Bake chicken for 35 minutes, or until done. You may buy pre-cooked chicken breast or low-nitrate Boars Head sliced chicken or turkey if you prefer.
Toast bread in toaster.
Put bread onto foil lined baking sheet. Place vegetable/chicken/cheese mix onto top of bread
Broil for 6 minutes, watching so it doesn’t burn.
*The great thing about this dish is that it will work with whatever is in your fridge. Try adding spinach or kale, cherry tomatoes or eggplant. Whatever healthy vegetables you enjoy.
