Maple Balsamic Quinoa Salad

Many Americans are trying to reduce their risks of long-term health issues by trying to manage their body mass index (BMI) by increasing their daily exercise, reducing their stress, and improve and manage their food choices.  Some people choose to reduce the amount of red meat and increase vegetable and complex carb intake.  Quinoa is a high protein, complex carb choice that can easily absorb a variety of flavors to create a gluten-free, meatless meal.  I recently made this recipe from Clean Eating Magazine that was a hit with my whole family.  I used it for lunch as a side dish for the kids and I used as a topper for my salad. Are You Gluten Intolerant?

Many Americans have some level of gluten intolerance which may show through symptoms of stomach upset all the way up to Celica’s Disease.  There is a spectrum of disorders where gluten has an adverse effect on the body.  It’s generally accepted that one in 133 people have celiac disease, a genetic condition resulting in intestinal damage whenever they ingest gluten, a protein found in wheat, barley and rye.  Recently, the research community separated out those people who suffer from gluten-intolerance separately. Quinoa With Toasted Pine Nuts

Quinoa, an ancient grain, has the nutritional composition like that of common cereals. Quinoa seeds contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron. Quinoa is considered a superfood.  The protein content is very high, but not as high as most beans and legumes. Nutritional evaluations of quinoa indicate that it is a source of complete protein.  Furthermore, it is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is also a source of calcium, and thus is useful for vegans and those who are lactose intolerant.   Quinoa is gluten-free and considered easy to digest.  Use it as the basis of an entrée for a meatless dinner, as an element of a salad, or as a side dish.
